-Shape

Nenohi takes up an "octagonal" handle for the japanese knives.
The octagonal handle allows you to grip the knife at the same angle every time you hold it again.
This reproducibility allows the chef to control the knife as if it were an extension of his or her own hand.

 We design each and every handle to match the length and shape of all our knives, keeping in mind that they should be well-balanced when used.



2. Precision in handle attaching

In the process of attaching the handle, we place the greatest importance on keeping the knife at the center of gravity in the hand (the tip is lighter) and on attaching the knife to the handle in a strictly straight manner.
We also determine the optimum position for each shape to hold the knife as an extension of the hand, and attach the handle precisely to that position.

3. Beauty

The "Chin", the part that touches the finger when using the knife, is precisely rounded and polished for a beautiful appearance and a stress-free grip and comfort of use.

The gap between the knife and the handle is filled by cutting the same wood (ebony for ebony, magnolia for magnolia) and inserting it into the gap.

Furthermore, by soaking the invisible gaps with hot wax, water is prevented from penetrating into the gaps, preventing rusting of the knife and extending the life of the handle.
