Product Details

"NENOX" is the flagship model of Nenohi developed with the concept of creating the highest quality Western-style knives to meet professional demands.
Not only does it feature exceptional sharpness, but it also maintains its cutting edge for extended periods and offers outstanding durability,
allowing for balanced use in any culinary scenario.
With a wide variety of handle options available, some customers even collect them.
This NENOX series has been beloved by users both in Japan and internationally for over 30 years.

  • Commitment to NENOX solid configuration

    [Commitment to solid composition]

Nenohi specializes in knife construction using a single raw material known as "solid," which delivers superior cutting performance. (Solid construction)
This method, also called "hon-yaki" or "full steel," becomes extremely challenging when maximizing a knife's performance capabilities.
It brings out the full potential of the steel material and features remarkably minimal warping or bending during both production and use.
This solid construction achieves the demanding knife performance that Nenohi envisions.
It represents the pinnacle of knife-making that Nenohi has reached through accumulated research and refinement.

  • Hand-finished handles

    [Hand-finished handles]

Nenohi's Western knives feature blades designed for optimal performance. Since these blades would break if exposed to the heat of welding, mass production through welding is impossible. Therefore, Nenohi employs "hand-finished handle crafting," which costs dozens of times more than welding and allows only limited production.
To assemble the 16 different parts without gaps, even the shaping and polishing of all parts is done by hand. If the parts don't meet with perfectly flat surfaces, gaps will appear, allowing water to collect and negatively affecting rust resistance and durability. The precision handle-making techniques required to prevent these issues are extremely challenging.
Furthermore, the handles created through artisanal hand-finishing consist of "smooth curved surfaces," providing a grip that feels as if the knife is naturally adhering to your palm when held.

  • Handle Design with Hand-End Center of Gravity

[Handle Design with Hand-End Center of Gravity]

NENOX handles are designed with a center of gravity positioned at the "hand end."
By creating a structure where the knife's center of gravity rests at the hand end, the handle fits comfortably in your hand, making the blade feel lighter and achieving a highly practical grip that offers excellent maneuverability.
This design provides a sense of weight while allowing for extended use, with a feeling that the knife moves through ingredients with minimal effort.

  • Rich Variety of Handles

    [Rich Variety of Handles]

Nenohi's Western knives feature over 20 different handle types, including non-standard options.
Inspired by "custom knives," we have sourced and incorporated numerous materials from around the world that had never before been used for kitchen knives. Even with materials that are difficult to process (hard to carve), we achieve manufacturing by selecting high-quality abrasives specifically suited to each material.
Through our artisans' handwork—carving and polishing—we've succeeded in creating products using materials that would typically be considered challenging to work with.
