This is "sharpness-specific" model, which has been commercialized using a unique manufacturing method cultivated
through many years of research on very delicate steel material that was impossible to process in the past.
When pursuing sharpness, knives often become difficult to handle, prone to rusting, easily breakable, and hard to sharpen.
However, with the X Series, while focused on exceptional sharpness,
we have also considered the support aspects that chefs desire: a knife that cuts exactly as they want,
feeling like an extension of their hand, easy to use, requiring minimal care, and reducing the frequency of sharpening.

    Nenohi specializes in knife construction using a single raw material known as "solid," which delivers superior cutting performance. (Solid construction)
    This method, also called "hon-yaki" or "full steel," becomes extremely challenging when maximizing a knife's performance capabilities.
    It brings out the full potential of the steel material and features remarkably minimal warping or bending during both production and use.
    This solid construction achieves the demanding knife performance that Nenohi envisions.
    It represents the pinnacle of knife-making that Nenohi has reached through accumulated research and refinement.

    Nenohi's Western knives feature blades designed for optimal performance. Since these blades would break if exposed to the heat of welding, mass production through welding is impossible. Therefore, Nenohi employs "hand-finished handle crafting," which costs dozens of times more than welding and allows only limited production.
    To assemble the 16 different parts without gaps, even the shaping and polishing of all parts is done by hand. If the parts don't meet with perfectly flat surfaces, gaps will appear, allowing water to collect and negatively affecting rust resistance and durability. The precision handle-making techniques required to prevent these issues are extremely challenging.
    Furthermore, the handles created through artisanal hand-finishing consist of "smooth curved surfaces," providing a grip that feels as if the knife is naturally adhering to your palm when held.

    Nenohi's Western knives feature over 20 different handle types, including non-standard options.
    Inspired by "custom knives," we have sourced and incorporated numerous materials from around the world that had never before been used for kitchen knives. Even with materials that are difficult to process (hard to carve), we achieve manufacturing by selecting high-quality abrasives specifically suited to each material.
    Through our artisans' handwork—carving and polishing—we've succeeded in creating products using materials that would typically be considered challenging to work with.

After use, wash immediately and thoroughly dry with a clean cloth. This product is not dishwasher-safe.
